Kale is an incredible yogi- superfood and one of my favorites. It’s packed with phytochemicals, fiber and chloropyll, which is a blood builder. And the fresher our blood the more focused, mindful, flexible, healthy and glowing we’ll be.
Instead of cooking it, it can be tenderised with a little lemon or other healthy dressing add ons and made into a delish’ salad. A kale salad like Elana’s Clean Yogi Detox recipe provides a solid combination of protein-building enzymes, amino acids, antioxidants and minerals (incl. those found in sea vegetables).
Elana Amsterdam’s (aka Elana’s Pantry) Kale Salad (from The Clean Yogi Eats recipe collection)
2 Bunches kale
1⁄4 Cup pine nuts
1⁄4 Cup dried cranberries
3 Tablespoons olive oil
Steam the kale until it is bright green.
Meanwhile, in a cast iron skillet, toast the
pine nuts. Allow kale and pine nuts five
minutes to cool, then toss together in a
large bowl. Add dried cranberries and olive
oil. Toss and serve.
